  Sesame Ginger Asparagus with Blackened Tofu

Asparagus and Asian flavors were made for each other. Especially when those Asian flavors are ginger and sesame oil.  Together, they make for a bright, complex sauce that we couldn't stop eating.  We're serving it with udon noodles, blackened tofu and a fresh nut and herb topping.  (Don't love spice? Don't worry.  This tofu is flavorful but doesn't pack a punch.)

  Emerald Pasta With Fried Zucchini

We discovered this gem on the Smitten Kitchen blog, which discovered it in Yotam Ottolenghi's wonderful cookbook Plenty, which says it was inspired by his grandmother's signature Passover dish.  We love seeing how recipes evolve and couldn't wait to put our spin on it.  The result is a summery combination of fried zucchini, fresh mozzarella, peas, basil and parsley with a splash of red wine vinegar that's perfect hot or cold.  Yum! (Nervous about frying zucchini?  Don't be.  It's easier than you think.)

  Marrakech Foldover

Have you fallen for foldovers yet?  They're made by cooking flatbread dough on a skillet, then folding it over a delicious filling to create a dinner that's part calzone, part sandwich and totally delicious.  We're making a Middle Eastern-inspired version this week with edamame hummus, broccoli and carrots in a North African vinaigrette.  The result is out of this world good.

  Quinoa and Cauliflower "Rice" Bowl

Healthy comfort food.  This recipe combines all of our favorites in one irresistible dinner.  It starts with sautéed cauliflower "rice" and protein powerhouse quinoa tossed with fresh spinach and Chef Max's Asiago vinaigrette.  Topped with candied lemon, it's magic.

  Mushroom & Goat Cheese Tacos

Classic and delicious.  With Mexican spiced black beans, cremini mushrooms and spicy goat cheese, these tacos are incredibly tasty.  A little salsa fresca on top, and they're over-the-top good.
